Two questions in one
Asking which chatbot is European usually means two things: where does my data live, and which law applies. Le Chat by Mistral answers both most clearly. Mistral is a French company from Paris, hosts Le Chat in the European Union by default, and on Team and Enterprise your input does not train its models by default. The American providers now offer European storage, but they stay American, and US laws can oblige them to hand over data, even when it sits in Europe.
Which question weighs more depends on your sector. A marketing team rewriting copy is fine on a business plan from any provider. A law firm or healthcare provider with client files does better to look further. Is Le Chat by Mistral as good as ChatGPT?
For writing, summaries and translation in English, French and Dutch it does much of the same. For some tasks the big American models still score higher; test with your own work.
Is DeepL a European chatbot?
DeepL is a German company for translation and rewriting. It is not a general chatbot, but for translation work it is a European choice.
Can I use Mistral in my own software?
Yes, through Mistral's API. That way you build your own assistant on a European model.
What the GDPR asks, whichever you choose
The GDPR does not ban American chatbots. It asks for a processing agreement with whoever processes personal data, that you share only what is needed, and that your privacy policy mentions it. If data goes to the United States, that transfer must be covered, which the big providers do in their terms. A European provider removes that step, not your other duties. The gap between the business options is small next to your other costs. Choose on your data and on what the model does for your work, not on the price per seat. Test two options for a week with real tasks, a quote, meeting notes, an email in French, and see what you must fix before it goes out.
